Sesame Seed Crema

makes 1½ cups

1 cup raw white sesame seeds
3 cups boiling water
1 tsp. salt
¼ cup freshly squeezed lime juice

Place sesame seeds in a heat-proof container and cover with boiling water. Let sit for at least 30 minutes.

Drain sesame seeds and transfer to a high-speed blender; add salt. Process until a smooth paste forms. Add lime juice and blend to combine. Add a bit more water or lime juice to adjust consistency and flavor.
