Watermelon Salsa

Watermelons magically appear in grocery stores just when the summer gets hot, but local watermelons don’t ripen until late summer or early fall. If you happen to find one at the farmers’ market, savor it!
serves 4

2 cups finely diced watermelon
1 cup finely diced tomatoes
¾ cup finely chopped radishes
1 jalapeño, sliced thin
2 Tbsp. fresh lime juice
2 Tbsp. minced cilantro
1 tsp. salt

Combine all the ingredients in a medium bowl and gently stir together. Let sit for 15 minutes before serving.
