Grandma's Tomato Salad
Serves 4

Our Sicilian grandmother's recipe – try it with fresh, homegrown tomatoes and fresh lemon juice. Great served with pumpernickel bread to soak up the juices.

  • 1 ½ pound tomatoes
  • 1 large onion, sliced
  • ½ tsp salt
  • 1 tsp Greek oregano (dried)
  • 4 Tbs olive oil
  • 2 Tbs fresh lemon juice

Wash, core, and wedge the tomatoes. Thinly slice the onion and add to the tomatoes. Sprinkle the tomatoes and onions with the salt. Add the crushed Greek oregano, olive oil, and lemon juice. Toss the salad and let marinate for one hour.
